Each fillet is brined with brown sugar and salt, allowing the natural oils of the salmon to absorb a delicate sweetness before being smoked over oak. The result is a beautifully flaky texture with a deep, savoury smokiness balanced by a subtle caramel note from the brown sugar.
Expect bold flavour, clean smoke, and a melt in the mouth finish just as good eaten warm from the smoker as it is flaked through salads, pasta, or served simply with crusty bread and lemon.
